I’m thinking about what to make for dinner tonight – like I do every day! Of course, I work full time and this means there is not a lot of time to devote to menu planning. In spite of this lack of time, I like to make fresh, healthy meals daily for my family, but it can be a bit exhausting coming up with menu ideas every day. I usually have about an hour to devote to preparing dinner to please all – a growing 16 year old carnivore, a growing 12 year old vegetarian, a tired, grumpy overworked husband who is trying to lose weight, and an occasional drop in from my 19 year old college student on a budget, looking for a free filling meal a few times a week. Did I mention, of course, all of this happens on a budget! Paying lots of bills leaves us with around $100 to spend on food until the next paycheck!
